What Complete NFPA 96 Hood Cleaning Includes

The phrase “hood cleaning” is often used for very different jobs. One contractor may wash the filters and polish the visible canopy. Another may service the complete path that carries grease-laden vapor through the building. Those are not equivalent outcomes.


NFPA 96 is intended to reduce fire hazards associated with commercial cooking operations, and Utah lists the 2024 edition for kitchen exhaust systems cleaning.[1][2] The exact method depends on the system, but the service should be built around access, removal of deposits, restoration of components, and documentation.


The floor-to-roof service path

1. Canopy hood and plenum: Remove residue from visible and concealed collection areas above the cooking line.

2. Grease-removal devices and filters: Clean, inspect condition, and verify proper fit and installation.

3. Horizontal and vertical ductwork: Reach internal surfaces through adequate access points and remove deposits rather than cleaning only the openings.

4. Exhaust fan, fan housing, and discharge area: Clean blades and housings, inspect access and related components, and address grease at the roof discharge area.

Hive describes its service as full four-component cleaning: fan, ductwork, canopy hood, and filters.[3] Utah’s State Fire Marshal maintenance guidance describes a broader floor-to-roof scope that includes the hood, plenum, ducts, fans, fan housing, and roof discharge areas, along with protection of the surrounding work area.[4]


Before cleaning begins

Confirm the system layout and whether an accurate on-site exhaust diagram is available.

Identify access panels, changes of direction, inaccessible sections, fan access, and obstructions.

Protect appliances, controls, flooring, and adjacent surfaces from chemicals, water, and dislodged grease.

Follow site-specific lockout, rooftop, ladder, chemical, and electrical safety procedures.


During the service

The objective is removal—not relocation—of combustible deposits. Depending on the system, technicians may use scraping, approved degreasers, hot-water pressure washing, steam, or a combination of methods. Access panels and cover plates must be restored, the fan returned to its operating position, and fire-suppression components protected from inappropriate chemical exposure or accidental impairment.


What the owner should receive afterward

1. A completion or deficiency report identifying what was inspected, cleaned, inaccessible, damaged, or still requires correction.

2. Before-and-after photographs that show the system beyond what a manager can see from the floor.

3. A detailed invoice that identifies the work performed rather than using only a vague “hood cleaning” line item.

4. A conspicuous service label with technician and service information.

The Utah report states that service records are to remain on the premises for at least five years and places responsibility for maintaining fire-protection equipment records on the owner or tenant.[5] Documentation is not decoration. It is the evidence trail for management, the AHJ, and future service providers.


Hood cleaning is not suppression-system service

The exhaust system and the automatic fire-extinguishing system work together, but they are different systems. Cleaning the hood, filters, duct, and fan does not replace inspection and service of nozzles, detection components, agent cylinders, manual pull stations, and appliance coverage by an appropriately qualified suppression-system provider.


Six questions to ask before hiring

Will you clean the hood, filters, full accessible duct path, exhaust fan, fan housing, and discharge area?

Is the company licensed and is the individual technician registered for Utah work?

How will inaccessible sections, missing access panels, or mechanical defects be documented?

Will I receive photographs, a completion or deficiency report, a detailed invoice, and a service label?

Who handles submission to the local jurisdiction when reporting is required?

How will the next interval be set if our menu, equipment, or production volume changes?
